For thousands of years the pea has been a part of the Mediterranean diet, as has been revealed by seeds unearthed at prehistoric sites in the Middle East. Traditionally, mature pea seeds were consumed as a dry pulse, and later on immature seeds were harvested and eaten as a fresh green vegetable and known as “garden peas”. The pea is a very complete food, rich in protein but also in vitamins and minerals.
